If you're sure you want to take a gap year you should apply through UCAS for deferred entry. This means that you apply for a place to start your course a year later. Many university and college departments are happy for you to do this. There are some though that are not, so you need to check this out before going ahead.
Prospectuses will often tell you this, but if in doubt contact the institutions.
